Does AiKaan have any documentation on recommended method for handling deployment (OTA) which may require a reboot, or may just require restarting the wifi adapter?

You could visit artifact.aikaan.io which will help you create an artifact which supports a reboot . Look out for artifact type Aikaan OTA Reboot which will also help you run a script and perform a reboot as well.
Incase you just want to restart the wifi adapter , you can use Artifact Type Script and attach a shell script which runs a command to reboot your wifi adapter
